Chicken Parmesan is one of the great dishes of all times. It’s rich, elegant, tasty and economical. For a weekday night meal or for company, Chicken Parm is hard to beat. But here’s another way to fix it and it’s easier. Instead of a chicken breast, use ground chicken patties. It cooks quickly and it’s guaranteed to be tender and juicy. First, make the patties. I use a pound of … [Read more...]
Nags Head Stripers
It’s been an exceptional fall for catching stripers at Nags Head. Capt. Reese Stecher of Beach Bum Fishing has been hammering them back in the sound – nice size fish, too, Says Reese: “We have been catching limits of stripers every trip in November. A body of them has moved up into the sound. We have had caught them up to 28 inches there this month. We’re still catching stripers at … [Read more...]
Lake Anna Heating Up
Fishing has been excellent at Anna with schools of shad roaming the lake. Finding the shad will almost guarantee fish. Medium to jumbo minnows and swimbaits are working best for stripers and larger bass. Smaller fish are taking small minnows, small plastic grubs and small Hopkins jigging spoons. Lots of jumbo white perch, yellow perch, and crappie are to be had in the creeks on jigging spoons, … [Read more...]
Oh (It’s a) Deer!
If Virginia’s deer hunters are having as good of a year as the car drivers, they’ll have a record year. I have never seen so many dead deer on highways. Ever. We drove to Urbanna and back a couple weeks ago and there were dead animals every 5 or so miles along I-64. Daily, I see new carcasses on my 10-mile drive from Charlottesville to Ruckersville along 29 North. Just yesterday, the … [Read more...]
A Drive Down Memory Lane
A Boomer’s first love was likely his or her first car. It was one thing to drive the family sedan, but it was something else indeed to have your very own car. For most Boomers, that car was titled in the parents’ names, but if you had the keys, it was yours. My first car was a 1949 Pontiac two-door sedan. It was solid black with a little chrome here and there. I would not have been … [Read more...]
Tales of Br’er Fox
I was sitting on a stump in southern Albemarle County with a 30-30 rifle, hoping that a nice buck might happen by and give up his tenderloins, but Br’er Deer never showed. Br’er Fox did, however, and what a beautiful creature. About an hour before sunset, he appeared from behind a tree, nose to the ground, on the exact trail a squirrel had just used. Br’er Fox was hopping down that … [Read more...]
Turkey Parm Tenderloin
With Thanksgiving on the way, I had been thinking about a big roasted turkey with mashed potatoes and gravy, so when I came across a pack of turkey tenderloins a couple weeks back and they were on sale, it was an easy decision. However, I had no idea how I was going to prepare them. Turkey tenderloins are those tender tips on each side of the turkey breast. They are moist and juicy … [Read more...]
Green Greens? Not So Much
On most years, golf course superintendents pray for a summer of rain. Well, this year, someone did a heck of a prayer job because we had rain, rain and more rain, and now the same superintendents are praying for a lot less rain next year. Kevin Mann and I played Meadowcreek Golf Course a couple weeks back and the greens were a disaster. They were bald and muddy in many spots. There was so much … [Read more...]
Koss Sauce for Roast Beef – Wow!
Earlier this year, Sherman Shifflett from Louisa sent me a bottle of Koss BBQ Sauce. Sherman’s friend, John Koss, had begun production of his own creation, Koss Sauce. I tried some on some ribs and it was very good, not gooey sweet like most store-bought sauces. However, a week ago, I did an eye of round roast and sliced it thinly for sandwich leftovers. I had a couple packets of … [Read more...]
A Leucistic Finch?
In last week’s CvilleBuzz, I commented that the “blonde finch” Jill Smith had seen at her feeder may have been an albino house finch. Another loyal CvilleBuzz reader, Marilyn Norford, then emailed her observation that it was not an albino, but a leucistic bird. Below she explains: Leucistic and Albino Birds Albinism is another genetic condition that can turn a bird’s … [Read more...]
