Earlier this year, Sherman Shifflett from Louisa sent me a bottle of Koss BBQ Sauce. Sherman’s friend, John Koss, had begun production of his own creation, Koss Sauce. I tried some on some ribs and it was very good, not gooey sweet like most store-bought sauces.
However, a week ago, I did an eye of round roast and sliced it thinly for sandwich leftovers. I had a couple packets of Arby’s Sauce in the fridge and used them, and it made a great sandwich. The next day, I still had roast beef but no more sauce and was thinking I might even try to create my own version of Arby’s Sauce. Then I remembered my bottle of Koss Sauce. I piled a big stack of roast beef slices high on a bun, doused it with Koss Sauce and it was fantastic – worlds better than Arby’s Sauce. I usually don’t put any kind of sauce on steak or prime rib, but a thinly sliced eye of round roast or a slow-smoked bottom round begs for a good sauce.

This is really good stuff – the perfect compliment to a roast beef sandwich. It’s a little tangy with a hint of tomato, vinegar and spices, and not overly sweet. It reminds me of that delicious sauce from HumpBurger in Charlottesville, a roast beef sandwich shop now out of business.
I urge my fellow chefs to cook an eye of round on high heat (see last week’s article) and then serve it with Koss Sauce. It can also be used on chicken or pork dishes.
