With Thanksgiving on the way, I had been thinking about a big roasted turkey with mashed potatoes and gravy, so when I came across a pack of turkey tenderloins a couple weeks back and they were on sale, it was an easy decision. However, I had no idea how I was going to prepare them.
Turkey tenderloins are those tender tips on each side of the turkey breast. They are moist and juicy and weigh about a pound each. My pack had two loins. I decided to do a mayonnaise Parmesan sauce and bake the tenderloins. Mayo always makes a great baste for turkey and Parmesan cheese is good on most anything. My Turkey Parm Tenderloins were very good for that Pre-Thanksgiving dinner and made even better sandwiches the next day. Here’s how I did it.
In a small bowl, mix a cup of mayonnaise with a half-cup of finely grated Parmesan cheese. Add salt, pepper, a little poultry seasoning and a sprinkle of garlic powder. Place two turkey loins in a shallow baking and coat thoroughly with the mayo/parm sauce. Bake uncovered for 30 minutes in a 350 oven, then remove and sprinkle a half cup of parmesan on top and bake an additional 5 to 10 minutes, until the cheese is golden brown.
Very simple, very economical and a great way to get your turkey fix either before or after Thanksgiving.
Turkey Parm Tenderloins
2 Turkey loins
1 C mayo
1 C finely Parmesan (divided)
½ t poultry seasoning
½ t garlic powder
S & P to taste
