I like making muffins as a breakfast side but recently decided to switch gears and make cupcakes instead. I made Apple Pie Cupcakes, to be exact and they were yummy – and “easy as pie” to make. There are only 4 ingredients – a can of apple pie filling, three eggs, a box of yellow cake mix and a jar of cinnamon sugar (or blend your own). Start by opening a can of apple pie filling, then chop … [Read more...]

Squirrels, Beware!
I have one squirrel in my yard who has figured out how to bypass the baffles on my bird feeders. I don’t know how he does it. I’ve never caught him in the act. He either somehow shimmies up and over the baffle or takes extraordinary leaps from the ground or the bushes and cover nearby. But somehow, this one squirrel finds his way up and into to my pricey sunflower hearts. But in my ongoing … [Read more...]
Born to Fish
I was born to fish. Really. Fishing has always been in my blood. One of my earliest memories, before I had once wet a line, was sitting in Mama Ida’s lap as she read me the Sunday comics. One of those strips was “Henry”, a bald-headed kid who also loved to fish. Henry would often be depicted walking down the street with a rod in his hand and a stringer of fish over his shoulder. Those fish … [Read more...]
Bluefin Time
Giant bluefin are now prowling the waters off the Carolina coast and dozens of charter captains are eager to put you on a fish that weighs as much as a Mini Cooper automobile. One such outfit is Phideaux Fishing Charters out of Wanchese. Contact them at 252-473-8051. There were good numbers of winter drum beached at Ocracoke over the holidays along with a few sharks. Speckled trout, puppy drum … [Read more...]
Lucky Black-Eyed Peas
We had corned beef, cabbage and black-eyed peas for our New Year’s supper. If that doesn’t bring us luck, what will? Eating black eyed peas on New Year’s Day is a long-established symbol for good luck, stemming back to West African culture where the natives believed that little legumes not only brought prosperity, but also warded off evil spirits - and I’m all for that.An interesting story … [Read more...]
Gasoline – $2.17 a Gallon
On our drive to and from Atlanta over the holidays, we saw gasoline as low as $2.17 a gallon, and it’s trending even lower. Currently, gasoline is the cheapest it’s been in five years. As a reminder, in 2022 under Biden, gas was nearly $5 per gallon. Affordable? Hardly! In other tidbits of good news, the Gross Domestic Product was up 4.3% last month, nearly 50% higher than predicted. The Dow … [Read more...]
Hash Brown Potato Soup
I think I’ve printed his recipe before, but it’s Soup Season, so repeats are in order. On a recent chilly night, I had a hankering for some tummy filling Potato Soup and went to my old standby - Hash Bown Potato Soup. It was delicious, as usual, easy to put together and we wolfed it down. Here’s how. Combine 1 (30-oz.) bag of frozen hash browns, 1 C diced onion, 4 C chicken broth, 1 can … [Read more...]
What’ll You Have? What’ll You Have?
Those words are what you’ll hear when you reach the front of the line at The Varsity, Atlanta’s premiere hot dog eatery. I dearly love hot dogs and when we get to Atlanta to see my son and his family, a trip to the Varsity is in order. The Varsity is a restaurant chain in Atlanta, Georgia and the main branch of the chain was billed as the … [Read more...]
Amish Country Roll Butter
I was reaching for a box of butter in the dairy section at Food Lion when my eye caught a wrapped package called Amish Country Roll Butter. It was one-pound log of butter wrapped in wax paper and not much more in price than a pound of regular butter. What the heck, I’ll give it a try. All I can say is bring on the “Buttah, buttah, buttah!” If you believe that “Everything is better with … [Read more...]
