When planning menus, I usually don’t have a problem with meats or the main course; it’s the sides that I struggle with. I get tired of tossed salads all the time, though they are good for you.
Recently I tried a green pea salad and it tuned out well – a nice change of pace. There are many recipes for sweet pea salads, but I went for the quickest and easiest in preparation.
I started with two packs of frozen green peas and put them in a bowl to partially thaw. Next, I added 2/3 cup of mayonnaise and 1/3 cup of ranch dressing and mixed those well with the peas. I finely chopped a third cup of red onion, added that along with 1 C shredded Swiss cheese and 1/3 cup of pre-cooked chopped bacon. I finished with 1 T sugar and some salt and pepper. Chill in the fridge for an hour or so and allow the flavors to blend and the peas to completely thaw, and serve. This goes with most anything, it’s easy and a welcomed change from a typical tossed salad.
Quick Sweet Pea Salad
2 Pks. frozen green peas
2/3 C Mayo
1/3 C Ranch dressing
1/3 C finely chopped red onion
1/3 C pre-cooked chopped bacon
1 C shredded Swiss cheese
1 T sugar
S & P to taste
