We decided to celebrate Father’s Day by dining out at Bonefish Grill. We didn’t have reservations and the place was packed, but not at the bar. That’s usually our “table of choice”. You get better service – the bartender is typically the restaurant’s top employee. Drinks come quickly and sometimes you can strike up an interesting conversation and meet new folks. So, when there were seats available at the bar, we pulled up two stools and ordered. For a special, that evening, they were serving Crab Crusted Pompano. I ordered that and it was outstanding.
Rarely do you see Pompano in a restaurant, but it is one of the sweetest, most delicious fish of all. It ranks right there with Chilean Sea Bass.
Pompano are silvery, deep-bodied fish, like a permit or an angel fish. They are found primarily in southern waters but are occasionally caught from a Virginia pier.
Bonefish does not always offer Pompano, but if they do, or if you see any at seafood market, don’t hesitate. They are unbelievable tasty.
