Springing Onions

I harvested a few spring onions from my garden this week. What a treat. Spring onions, or green onions, are an accommodating vegetable. When I was at Carolina, there was a small diner just outside Chapel Hill, in Carrboro, I believe. Thankful for The Specks

Just a few years ago, they shut down the speckled trout fishing entirely in Virginia because a late freeze had decimated populations. But what a comeback! I stopped by Harris Teeter last week to pick up a melon and as I passed by the seafood section, I saw that they had Red Argentine Shrimp, so I quickly bought a pound and a half.
