I have become fascinated with all the beautiful weeds and wildflowers that grow literally on the sides of our roads. One I have noticed in recent weeks is a lovely bluish, purple flower that I believe is wild chicory, sometimes called a blue daisy, blue dandelion or horseweed. It has just recently bloomed and I see it in clusters.
Like many other of these oft-ignored plant/weeds, it is quite edible and often cultivated for salad leaves. The roots, when dried and ground, can be used as a coffee substitute. Inulin, an extract, has been used by food manufacturers as a sweetener and a source of dietary fiber. Chicory is also grown as a forage crop for livestock.
The lovely plant flowers from late summer until this month, so we may have a few more short weeks to enjoy its beauty.
