I have discovered some sweet peppers I really enjoy. They are small peppers and come in an assorted bag of red, yellow, and orange. They are called Wild Wonders from Sunset Foods. They are mini peppers and super sweet.
They are good sauteed and added to any Italian dish, but I thought I’d make a summer salad with the little fellows and came up with this concoction.
I chopped up about 15 of the peppers and removed the seeds and strings. I sliced 1 cucumber, 10 cherry tomatoes, and added a 1 C of frozen corn, 1 slice of onion and a chopped avocado. I seasoned it with ½ C raspberry vinaigrette and let it rest about an hour in the fridge. The mini peppers performed as advertised – a tasty, colorful, and nice change-of-pace summer salad.
Sweet Pepper Salad
15 or 20 Mini Sweet Peppers
1 C frozen corn
1 cucumber
10 cherry tomatoes
1 slice of onion
1 avocado
