Tuna salad is always a great lunch option – tasty, very healthy and diet friendly. On a recent visit at Wal-Mart I looked for some tuna, preferably packed in oil, which delivers more flavor, and I found what I was looking for – Solid White Albacore Star Kist Tuna packed in Vegetable Oil. I bought 2 large cans for about four-bucks each. I have found – by the way – if you pay more for tuna, you get a much better quality. This made the best tuna salad I have ever had.
Here’s how.
It’s a “2 fer” recipe. Two 5-oz. cans of solid white albacore packed in vegetable oil (soybean oil to be exact), 2 tablespoons of dill cube relish, 2 tablespoons of finely chopped Vidalia onions. 2/3 C of mayonnaise and 2 hard boiled eggs finely chopped. Oh, and 2 or 3 shakes each of salt and pepper.
Drain the tuna, add the ingredients and allow to age in the fridge. Loaded with Omega-3’s, this is some-kind-of-good tuna salad.
2 Cans Star Kist Solid White Albacore
2/3 C mayonnaise
2 hard boiled eggs
2 T dill relish cubes
2 T finely minced onion
S & P to taste
