It’s fall, for sure, and time to make soup. I tried a new recipe last night and it was as stunning as a sugar maple in full, fall foliage. Best yet, it’s as easy-as-pie to assemble. It’s so simple, I hesitate to share this recipe, but it was – I believe – the best Vegetable Beef Soup I’ve ever made.
Here’s how.
It’s a crock pot recipe, so it’s not time sensitive. Put it on sometime in the morning and eat it sometime that evening. I used a 1-pound package of stew meat, but chuck steaks work as well. Put a 14-oz. can each of carrots, potatoes, green beans, and corn, a can of beef broth, plus a 28-ounce can of crushed tomatoes in a crock pot (use all the juices in the cans). Add 1 package of Onion Soup Mix, a little salt and pepper, turn the crock pot on low and after 6 hours, it’s ready when you are. All the flavors of the vegetables and juices come together perfectly with the beef, soup mix and broth. It couldn’t be easier, and it could hardly be better.
Super Easy Vegetable Beef Soup
1 pound beef stew meat
1 14- oz. can corn
1 14- oz can green beans
1 14- oz can whole potatoes
1 14- oz can sliced carrots
1 14-oz. can beef broth
1 28-can crushed tomatoes
1 package Onion Soup Mix
