I made a fun dish this week. Nothing fancy, just fun, and pretty good. I made what I call Sloppy Josés. Not Sloppy Joe’s, Sloppy Josés. It’s Mexican, you know, and a version of the American Sloppy Joes.
When we were Senior High Advisers at church, one of the foods most in demand for Sunday night meals were Sloppy Joes. The kids loved them, and if your kids like Mexican, they’ll love these Sloppy Josés.
I used about a pound and a half of ground chuck, 85/15, but the blend doesn’t matter so much as what you put in it.
I kept it fairly simple. I used 1 C of a mix of frozen onions and peppers. I get them at Wal-Mart and it makes things lots easier than dicing onions and chopping peppers, but that would work as well. Sauté the onion/pepper mix in a tablespoon or 2 of olive oil, then add and brown the ground beef. Drain off any excess grease, then add 1 packet of taco seasoning, 1 1/2 C medium salsa and 1 small can of mild green chilis. Let the mixture cook down a bit and thicken, then serve on either buns or tortillas. Add cheese, avocadoes, sour cream, spicey tomatoes or any of your favorite Mexican condiments, and enjoy – José.

1 ½ lbs. Ground Chuck
2 T olive oil
1 C pepper/onion mix
1 Pkg. Taco Seasoning
1 1/2 C Salsa
1 small can green chilis
