Perfect Potato Wedges

On a recent trip to Atlanta to see my son Jimmie and his family, the Atlanta Brewers served us salmon in caper sauce along with potato wedges. The salmon was delicious but the potato wedges were truly remarkable, so much so that I asked for the recipe. It’s not often that you ask for a potato wedge recipe, but these were special. I have had and enjoyed this dish several times since we saw Jimmie.
Here is his recipe.
Potatoes (3 or 4) – cut into equal sized wedges. You want them to stand up while baking.
Sprinkle with Parmesan cheese and toss the wedges in a few tablespoons of olive oil to coat. I lay them out on a pan at this point and sprinkle with the following:
2 Tsp. of garlic powder
2 Tsp. salt
2 Tsp. Zesty Italian seasoning
Bake at 375 for about 20-25 minutes or until nice and brown.
Try them. They are yummy!
