Recipes don’t have to be fancy or exotic to be good. Most comfort foods, in fact, are simple recipes, and it’s hard to beat comfort food, like old-fashioned corn pudding.
This is a dish enjoyed by everyone and it tastes almost like a dessert. Corn pudding is easy to make and sure to please. I don’t know why we don’t have and enjoy this dish more often.
Here’s how I make mine.
First, I melt a stick of butter (not margarine) in a microwave safe bowl. Next, I add two eggs, a cup of sour cream, a 14-oz, can of whole kernel corn (drained), a 14-oz. can of white cream-style corn (undrained), a 1/4 cup of Half and Half, and a box of Jiffy Corn Bread Mix. Mix well, pour in a greased casserole dish and cook in a 350 oven about 45 minutes. Cheddar cheese sprinkled on top during the last 10 minutes in the oven is an option, but I usually leave it off and simply let the top brown. Wait at least 10 minutes before serving because it comes out of the oven “lava hot.” But it’s good. Make some soon.

1 can whole kernel corn
1 can white cream-styled corn
1 c. sour cream
¼ c Half & Half
1 box Jiffy Corn Bread Mix
1/2 c cheddar cheese for topping (optional)
