I tried my hand at an Onion Pie recently as a starch to pair with roast beef and as a change of pace from a baked potato. It was very tasty and very easy. Here’s how.
You’re going to love the crust – Ritz Crackers and butter. How can you go wrong? Finely crush enough Ritz crackers to make 2 ½ cups, put them in a pie plate and add 1/3 C melted butter. Mix well, then spread across the pie plate and press to the bottom and sides. That’s the crust part.
For the filling, sauté 2 ½ C thinly sliced sweet onions in 2 T butter. Cook them until they’re soft, maybe 10 minutes. In a separate bowl, mix ¾ C cream, 2 beaten eggs, salt & pepper to taste, and a dash or two of tabasco.
Put the onions in the pie crust, pour the egg/cream mixture over the filling and then sprinkle ¾ C grated cheddar cheese on top. Bake in a 350 oven for 40 minutes and let cool 5 minutes or so before serving.

(Crust)
2 1/2 cups crumbled Ritz
1/3 cup melted butter
(Filling)
2 tbsp butter
2 1/2 cups thinly sliced sweet onions
3/4 cup whipping cream (or Half & Half)
2 eggs
1/2 tsp salt
1/4 tsp black pepper
2 or 3 dashes Tabasco
3/4 cup grated cheddar cheese
(Dress with parsley if you want to get fancy)
