I was in Kroger’s this week and saw a family pack of chicken drumsticks for five bucks. I hadn’t planned on drumsticks for a meal, but this was too good to pass up and I happen to like drumsticks.
There were a dozen fat chicken legs in the package, enough for 2 meals. $2.50 a meal for 2 people? You can’t beat that in these days of spiraling inflation.
Now, what to do with all these drumsticks?
I love Fried Drumsticks and I like them on the grill with my Carolina BBQ sauce, but I decided on a recipe called Maple Dijon Drumsticks. Even better, it’s a crock pot recipe which means easy clean up (with slow cooker liners) and you can put them on and “forget about it” with the crock pot.
I have a couple old bachelor friends who read and use some of my recipes. Hey guys, this is perfect for you if you like drumsticks. Wings will work if you’re a fan of white meat.
Here’s how.
Line the crock pot and place 6 or 8 drumsticks in the pot and sprinkle with salt, pepper, and garlic powder. In a separate bowl, mix ¼ C pure maple syrup (no imitations), ¼ C Dijon mustard, and 2 T balsamic vinaigrette. Whisk thoroughly, then pour the sauce over the drumsticks. Turn the Crock Pot on high and cook for 4 hours or on low for 6 hours.
With the contrast of tangy mustard and sweet syrup, they are yummy.
Maple Dijon Drumsticks
6 or 8 skinless drumsticks
1/4 cup pure Maple syrup
2 tbsp balsamic vinegar
1/4 cup Dijon mustard
3/4 tsp garlic salt
Salt and pepper to taste
