I came across a Kraft recipe for a Mexican dish that is just plain yummy. I am not a huge fan of TexMex stuff, but this I like – and so do kids. It’s called a Layered Enchilada Bake. It takes about 25 minutes to prepare and cooks in 40 minutes -and it will feed 6 hungry hombres.
You’ll need:
2 pounds of lean ground beef
1 large onion chopped
2 cups Thick ‘n Chunky salsa
2 cans black beans, rinsed and drained
½ cup Zesty Italian Dressing
2 Packets of dry taco seasoning (mild or hot, your choice)
6 flour tortillas (8 inch)
1 pint sour cream
16 ounces shredded Mexican cheese
Heat oven to 400 degrees.
Brown the meat and chopped onions and drain excess fat. Stir in Taco seasoning mix, salsa, chunky salsa and beans.
Arrange 3 tortillas on the bottom of a 9×13 baking dish. Add a layer of meat mix, a layer of sour cream, a layer of the Mexican chees and repeat.
Cover with aluminum foil and bake for 30 minutes. Remove the foil and bake an additional 10 minutes. Let the dish rest at least 5 minutes before serving.
Serve with fresh salsa and your favorite Mexican seasonings.
