I made some Blue Cheese Dressing last week and it was so good, I decided to try my hand at another family favorite – Thousand Island Dressing. It turned out infinitely better than the standard Kraft-type dressing.
The origin of Thousand Island Dressing remains a matter of dispute to this day. One theory is that the name came from the Thousand Islands region along the St. Lawrence River. A wealthy resident, George Boldt who built Boldt Castle at the turn of the 20th century was vacationing in that region and tasted a dressing made by Sophia LaLonde, a fisherman’s wife. He was smitten by the tangy taste and added it to his hotel menu – Thousand Island Dressing.
Regardless of its origin, Thousand Island Dressing is a versatile addition to any tossed salad – and it’s best if it’s homemade.
Here’s how I made my version of the infamous Thousand Island Dressing and it’s quite simple to put together.
I used 1 C of mayo, ¼ C minced onion, 2 T ketchup. 2 T sweet pickle relish, 1 t fresh lemon juice. 1/2t paprika and a bit of kosher salt. Mix well and store overnight in the refrigerator and it gets better with age.
Homemade Thousand Island Dressing
1 cup mayonnaise
1/4 cup onion, minced
2 tablespoons ketchup
2 tablespoons sweet pickle relish
1 teaspoon lemon juice
1/2 teaspoon paprika
1/4 teaspoon kosher salt
