Our good friend, Nancy McKay, gave us a fruit basket of gourmet pears with a large wedge of Havarti Cheese. We ate the pears (Nancy made a pear dessert) but then had the cheese remaining.
My wife scoured cookbooks and the Internet and found an interesting recipe for Havarti Cheese Dip. It was one of the best dips I have ever had the pleasure of dragging a Ritz Cracker through. If you are entertaining for New Year’s Eve (or thinking ahead to a Super Bowl Party) consider Havarti Dip. It is simply delicious and quite easy.
Start by grating the cheese – use the largest size shred of your grater. A 4-oz. block makes about a cup and a half of shredded cheese. In a medium bowl, stir together the 1 ½ cups of cheese with 1/3 C mayo, 1/3 C sour cream and 1/8 t black pepper. Next, add ¼ C roasted red pepper (diced from a jar) and the only the thinly sliced green from the tops of 6 green onions. Cover with plastic wrap and let it blend in the refrigerator for at least 30 minutes. Serve with your favorite crackers and Happy New Year!
Easy Havarti Cheese Dip
4 oz. Havarti cheese
1/3 C mayo
1/3 C sour cream
1/8 t black pepper
¼ C roasted red peppers from a jar
6 green onions (tops only)
