Chicken salad, egg salad, tuna salad. Then repeat. Chicken salad, egg salad, tuna salad. When it comes to salads for sandwiches, I have been in a rut. Chicken, egg, tuna. Not that there’s anything wrong with those three. They make great sandwiches, but I was bored.
How about ham salad?
I have had ham salad before that was gross – like cat food. Surely I could do better, and I think I did.
I began my experiment with cubed ham from Smithfield – one of my go-to’s for a quick omelet. It comes in 2-oz. packages. I used a couple packs. I also decided to use what was basically the makings of egg salad, so I boiled two eggs, diced a large stalk of celery, diced about a ¼ cup of onions, squirted a little mustard on top and added enough mayo to hold it all together. It was really good and fairly healthy – only 70 calories per package of ham,
Make it up in advance. It gets better after it rests in the fridge for a spell. It is certainly easy and adds a new dimension to lunches. Try a batch.
Ham Salad
2 pkgs. Smithfield Cubed Ham (not diced)
2 hard boiled eggs
1 stalk celery, finely diced
¼ C diced fresh onion
1 t mustard
1 C mayo give or take
