Green beans are a lot easier to grow and much more prolific than Fordhook Lima Beans, but they are not nearly as tasty. There are few foods anywhere than can rival the goodness of a freshly picked Fordhook Lima boiled to a tender doneness and topped with butter.
It is one of my favorite foods in the world.
Years ago, I had a garden at our small lakefront cottage in Greene County and I sowed a couple rows of limas. They did famously – a great crop.
This year, I hope to duplicate that feat. I waited deliberately to plant because lima beans like warmer weather. They’re southerners, you know. I planted four rows, though my rows are shorter than most.
With a little luck, the vines will produce sometime in late July. I can hardly wait.
