We always called it Crazy Jane’s, but it’s really Jane’s Crazy Mixed Up Salt. It has been a staple in our pantry for 50 years. My wife, Crazy Nancy, uses it to make garlic bread when we eat Italian. She slices almost all the way through a loaf of French or Italian bread, pours melted butter between the slices, then sprinkles the bread with garlic powder and a heavy shake of “Crazy Jane’s” Mixed Up Salt.
Last week, I discovered another Crazy Jane’s product that is destined for my spice rack – Jane’s Crazy Chunky Mixed-Up Garlic Seasoning.
Basically, this is Crazy’s Jane’s Salt with chunks of garlic thrown in the mix. It is a super seasoning and I immediately incorporated it into a dish I now called Crazy Jane’s Salmon.
Here’s how:
First, buy some Wild Caught Salmon Filets – farm raised will work, but wild caught is healthier, and I found mine on sale at Food Lion.
In a small baking dish, squeeze a half of a lemon over the filets, then dot with butter. On top, sprinkle a generous amount of Jane’s Crazy Chunky Mixed-Up Garlic Seasoning and let it sit for about 20 minutes, to absorb all the flavors. Place the filets in a 400-degree oven for 15 minutes, garnish with fresh lemon slices and enjoy.
This is an easy dish, relatively economical and very healthy. And with a little Crazy Jane’s, it’s downright delicious.
Crazy Jane’s Salmon
1 6-ounce wild caught salmon filet per person
1 fresh lemon
½ stick butter
Jane’s Crazy Chunky Mixed-Up Garlic Seasoning to taste (Use a bunch!)
