Fresh catfish are hard to beat. They are raised in small farms and delivered to grocery stores fresh and ready for the frying pan. They are usually, but not always, available in the Kroger’s Seafood section. I looked last week, and they were. I bought three nice sized fillets for me and Nancy.

Simply rinse the fillets in cold water, shake them off, dip in the meal and pop them into a waiting skillet of hot oil. When the catfish turn a deep golden brown, you’re in for a real treat – especially if you have a little red-hot sauce to spice things up.
