I saw a recipe for stuffed chicken breasts that looked good. The more ways and the more chicken you can eat, the better off you are heath-wise and weight-wise – at least I am. So I gave this recipe a try and it’s a keeper. Very simple – chicken, mozzarella cheese, pepperoni, and panko crumbs. Begin with a large skinless and boneless breast section, then use a sharp knife and cut out a pocket … [Read more...]
P.F. Chang for Great Chinese Food
I’m not much on buying prepared foods at the grocery store. They are usually overly expensive and not very tasty – gross, sometimes. But every now and then, when you don’t have time to cook or run to the store, it’s nice to have something in the freezer to pop in the oven – and hopefully it’s not gross. For some reason, I was in that section at the grocery store and saw a package of Chinese … [Read more...]
Peanut Butter Pie
Sounds sorta’ goofy, doesn’t it? But let me tell you something. Peanut Butter Pie is unbelievably good. The recipe is in a cookbook Nancy gave me for Christmas – “The Happy in a Hurry Cookbook” by Steve and Kathy Doocy. Steve is the longtime morning host of Fox & Friends. He is a laid back, family kind-of-guy who happens to love to cook. Nancy saw him prepare a few of his recipes, live on Fox … [Read more...]
Finger Licking Good
It was a typical Sunday night for the Brewers. We couldn’t decide whether to eat leftovers, toss some burgers on the grill or maybe order a pizza. That’s when Nancy said, “How about fried chicken? That’s not fair. If anybody ever mentions fried chicken during a conversation about food, all bets are off. Nothing, absolutely nothing will ever be able satisfy an appetite after “fried chicken” comes … [Read more...]
Two Left Feet
The last time my son Jimmie was in town, he helped us clean up our downstairs storage room and removed a lot of clutter. He saw a pair of his old fishing waders in the storage room, hip boots, so he took them back to Atlanta. Last week, my grandson James talked Jimmie into an early morning duck hunt in a swamp somewhere in Fulton County. Jimmie remembered his waders, and tossed them in the truck. … [Read more...]
A Snow White Dove
“On the wings of a snow white dove He sends his pure, sweet love As a sign from above On the wings of a dove ” A great song recorded by Ferlin Husky, Dolly Parton and others. Don Taylor of Farmville had a visit from a snow white dove over the holidays. Don said he wasn’t sure if it was a pigeon or albino dove. He tried to get close for a picture, but he said it was … [Read more...]
Tautogs Biting Away
In Virginia saltwater, the rockfish season is in the rearview window, but there are still plenty of tautogs willing to bite. Sometimes called blackfish, ‘togs are scattered all along the East Coast. They are strange looking fish that average 2 or 3 pounds. Their claim to fame comes on the dinner table – they are delicious. There is even a restaurant called Tautog’s on 23rd St. in Virginia … [Read more...]
What Time is It?
Hey kids! What time is it? Breathes there a Boomer who doesn’t know the answer to that question? If it was Buffalo Bob Smith asking, and it was a weekday afternoon on NBC in the 1950’s, it was most definitely “Howdy Doody time.” Boomers remember the Howdy Doody Show as much for the quality of life during those years as for the quality of this popular children’s program. It was a time of … [Read more...]
Sweet Potato Pie
I had baked three beautiful sweet potatoes in the oven. I had rubbed them with a little olive oil and kosher salt and cooked them at 350 until they were soft and tender to the touch. They would have been delicious served with a slab of country butter – if I had just remembered to serve them. But I forgot, left them in on the counter behind a pot of collards and found them when we were cleaning up … [Read more...]
Dino-mite Melons
I have always said that I would gladly pay more in order to get a ripe, sweet melon than throw 3 or 4 dollars down the drain for a tasteless, unripe melon, and apparently I’m not alone. There is a new melon on the market from Brazil. It’s called a Dino melon because it looks a bit like a dinosaur (dino) egg. It’s white-ish with some specks of green on the skin. The flesh is also a light color and … [Read more...]
