I’m a big fan of cube steak. It’s always a good buy at the store – no waste, healthy, low prices and great flavor. But it’s tough and super chewy. I have tried marinating, coating with tenderizer and further pounding with the same results – it’s still tough.
But where there is a will, there’s a way. I saw a little four-pack at the store recently – under five bucks, and I was determined. I scanned various and sundry recipes and then decided to “nuke it” – in the crock pot. You can put a cast iron frying pan in a crock pot and it’ll be tender, and so were my cube steaks. Cut-with-a-butter knife tender. Here’s how I. pulled it off.
Coat the cube steaks in flower, salt and pepper and sear quickly in a frying pan on both sides in a little olive oil. Then on to the crock pot (make sure you use a liner for easy clean up). In the same frying pan, add a package of portabella mushrooms, a little butter and brown a bit and add to the crock pot. Mix a package of McCormick’s Brown Gravy Mix with a cup of water, stir thoroughly and add a can of Golden Mushroom Soup to the bowl, pour the mixture over the mushrooms and cube steaks, cook on low setting, wait 6 or 8 hours and enjoy comfort food at its finest. Cubes steaks, mushrooms and gravy – plus mashed potatoes, of course.
Really easy, really good.
