
I went into Aldi’s Grocery store on the way home to pick up some lettuce for that night’s salad and saw a cluster of vine ripened tomatoes for two bucks and change. They looked good and I bought them, not really knowing what I would do with the little red fellows. I decided to roast them.
Sometimes we cooks overlook the simplest of recipes. Always struggling with what to prepare for side dishes – vegetables – I hardly ever think of tomatoes, but I should. I roasted the tomatoes and served them with Fried Chicken and they were perfect.
I suppose there are a million ways to do Roasted Tomatoes, but I simply cut mine in half – they were about the size of a tennis ball.
Cut side up, I rubbed on a little olive oil, added salt and pepper, a bit of grated parmesan and some Roasted Garlic & Herb seasoning, popped them in a 400 oven for about 25 minutes, and they were ready and delicious. Tomatoes are coming in fresh now from California and Mexico. Take advantage and roast a few. Easy and delicious

S & P
2 T grated parmesan
