
I was tired of baking the same-old, same-old cookies for the kids in the family I cook for: though the young’uns never seem to tire of fresh baked cookies. But for a change of pace, I found a recipe and for Raspberry Crumble Bars, perfect for desserts or healthy snacks. Sometimes raspberries are a little pricey, so I stopped by Sam’s Club and bought two containers for about eight bucks total. Enough for the recipe with a pint left over for cereals.
It’s really an easy recipe. Here’s how.
In a large bowl, mix 2 C flour, 2 C oats (I used generic Old-Fashioned Oats), 1½ C light brown sugar and a teaspoon of baking powder.
Next melt 2 sticks of butter and add that to the oat mixture. Stir until it forms a nice, wet dough ball. Spread about 2/3 of the oats on the bottom of an ungreased 9×13 casserole dish and press firmly to pack it down. In another bowl, put 4 C of raspberries with ½ C white sugar, 2 T flour and 2 T lemon juice. Toss until the raspberries are well coated then spread the raspberries over the oats in the casserole. Finally, sprinkle the remaining 1/3 of the oats over the raspberries and pop into a 350 oven for about 40 minutes.
Cool on a wire rack and cut into squares.
Rich, tasty, healthy, and easy.

- 1 tsp baking powder
- 1 cup melted butter
- 4 cups fresh raspberries
- 1/2 cup white sugar
- 2 tbsp flour
- 2 tbsp lemon juice
