Have you priced a Standing Rib Roast recently? The sticker shock is almost enough to make you want to go Vegan. Many meat departments are now offering easy payment plans if you spring for a rib roast. Suffice it to say that they are expensive.
Well, how about a Poor Man’s Rib Roast? Sounds better, doesn’t it?
Probably most families have this recipe tucked away in their cookbooks, but it never hurts to repeat an Oldie, But Goldie Recipe especially with meat prices as they are.
The ingredients are simple, but the recipe is very time sensitive. It all begins with an eye of round roast in the 3- to 4-pound category. Bring the roast close to room temperature by leaving it on the counter for 45 minutes or so. Season thoroughly with a teaspoon of garlic powder and a teaspoon of onion powder, plus lots of salt and pepper.
Preheat the oven to 500. Place the uncovered roast in the oven and immediately reduce the temperature to 475. Bake at that temperature for exactly 7 minutes a pound, 21 minutes for a 3-pound roast. Then, turn the oven completely off and do not – I repeat – do not open the oven door. Let the roast remain in the oven for 2 ½ hours for medium doneness (a pink center). Transfer to a cutting board and cut into then slices. Baste with the au jus and enjoy an affordable and delicious beef roast.
