
I tried a fun dish for the family I cook for. I know the kids like pizza – who doesn’t? So, I tried something called Pizza Muffins, basically a mini pizza in a muffin tin. I used the extra-large size muffin tins, but you could use the regular size. I also had my first experience with making my own pizza dough. In the past, I have either bought the pre-made pizza crusts or the pizza dough in a can, but I wanted to try my hand at spinning the dough up in the air like they do in authentic, Italian pizzerias.
I don’t advise this for non-Italians. Part of my pizza dough is still attached to the ceiling fan in the kitchen. Just roll the pizza dough out on a floured surface. It’s safer.
The pizza dough I used comes in packages, it’s less than a buck and makes an entire pizza crust. One pack makes about 6 muffin pizzas, so I used 3 packages and made 18.
To make the pizza dough, add 1 C of hot water to the flour, form into a ball, cover and let it sit for about 5 minutes. On a floured surface, knead the dough a bit and roll it out to a large circle. I used a 4-inch-wide bowl to cut my dough, then rolled the circles out to about 6-inches and centered them in the muffin tins. I prebaked the pizza muffins about 8 minutes in a 425 oven, When they had cooled, I added 4 slices of pepperoni, 1 T of pizza sauce and about 1 T of Italian style cheese. To serve, cook again in a 425 oven for about 10 minutes and they’re done. It’s a fun dish, easy to prepare and easy to eat.

3 Pkgs. pizza dough mix
1 jar pizza sauce
Pepperoni slices to suit
8 oz. grated Italian cheese
