
I made a fun dish last week. Pizza Lasagna. It’s a genuine kid pleaser and as Tony the Tiger says, it tastes “Great”.
But really, how can you go wrong? Lasagna? Pizza? Both winners and this combination is as well. You make it as you would lasagna, just switch a few ingredients.
Start by boiling the lasagna to al dente. I much prefer original rather than oven-ready lasagna. I can better control the texture. Brown one pound of mild Italian sausage in a frying pan, remove and pour off any grease. Add ½ chopped bell pepper and ½ chopped onion. Sauté until the onions are translucent. Add back the sausage, a jar of pizza sauce,1 can Italian style diced tomatoes, and cook till thoroughly heated. In a separate bowl, combine a container of ricotta cheese, 1 t. Italian seasoning and mix well.
In a 9 x 13 greased baking dish, spread 1/4 cup sauce mixture in the bottom. Arrange 3 cooked noodles over the sauce. Spoon and spread half of ricotta mixture over the noodles. Top with 1/2 cup mozzarella cheese, 1 cup sauce, and cover with a layer of pepperoni slices. Repeat the layers and top with remaining 3 noodles, sauce, mozzarella cheese, and more pepperoni slices. Sprinkle with Parmesan cheese. Bake 30 minutes at 350, or until the lasagna is nice and bubbly. Voila! Pizza Lasagna.

Nine uncooked lasagna noodles
1(15-oz.) can pizza sauce
1(14 1/2-oz.) can Italian style diced tomatoes
1/2 chopped green bell pepper
1/2 chopped onion
1(15-oz.) container ricotta cheese
1teaspoon dried Italian seasoning
8oz. shredded mozzarella cheese
2 (3 1/2-oz.) pkg. pepperoni slices
2 tablespoons grated Parmesan cheese
(Optional: Mushrooms, olives, and other pizza faves)
