
Everybody likes Lasagna and most everybody enjoys good Tex/Mex food, so how about Mexican Lasagna? I made a batch this week and it was delicious.
You can really create your own version of Mexican Lasagna by including the types of foods you like in your Burritos and Tacos, and that’s what I did. I encourage everyone to use their imaginations and go with what they like, but here’s my version.
I started with Ground Sirloin. I have been using this as my hamburger of choice recently because when it comes time to pour off the grease, there’s not much to pour – meaning it’s healthier. It also has an excellent flavor. Ground sirloin has a flavor more like steak than ground chuck roast, and though it’s a little more per pound, I think it’s worth it. Besides, we’re only talking a few bucks, not $20.
Brown about a pound and a half of the meat, adding a ½ C chopped onions and salt and pepper. In the process, pour off what little grease there is – it won’t be more than a few tablespoons. Next, mix a packet of Taco Seasoning (I used Taco Bell Taco Seasoning Mix in a bowl with ½ C water). Stir well and add to the burger and onions. I also added 1 can of rinsed and drained black beans, 1 can diced tomatoes with green chiles and 1 jar (24 Oz.) of chunky salsa. Let that simmer for a bit to reduce the liquid.
In a pot of boiling water, add 9 strips of lasagna and cook to al dente. Remove, drain, and assemble your lasagna dish by first adding a few scoops of the burger sauce (enough to just cover the bottom of a 10×13 casserole dish) and three strips of lasagna. Then add more burger and sauce and top with Ricotta Cheese (a 15 oz. container). Spread the cheese over the sauce, then add three more strips of lasagna, more sauce plus about half a bag of Mexican cheese and more sauce. Add three more lasagna strips and finish with a little sauce and the remainder of the Mexican Cheese. Bake covered at 350 for 20 minutes and uncovered for another ten minutes. Serve with some Jalapeno Cornbread and you’re in business.

1 ½ Pounds Ground Sirloin
9 strips of uncooked lasagna
½ C chopped onion
S & P
1 can black beans
1 Pkg. Taco Mix
24 oz. jar chunky salsa
1can diced tomatoes with green chiles
1 15 oz. container Ricotta Cheese
1 16 oz. bag shredded Mexican blend cheese
