Go to any church picnic, family reunion or funeral in the South and there will be meatballs. Beef meatballs swimming in a rich sauce. But when you leave the affair, there will be no more meatballs. They vanish like roaches when the light turns on.
Meatballs are simply a southern tradition, a staple. They are often reserved for appetizers, but a big helping over some egg noodles makes a killer entree.
Below is a Southern Style Meatball family recipe. We had them last night and they were primo. By the way, frozen beef meatballs from the store work well, or you can go all out and make your own meatballs. It’s the sauce, that counts.
Try this recipe sometime soon. It’s a winner.
For the Meat Balls
2 lb. ground meat
½ C catsup
½ C evaporated milk
2 t seasoning salt
3 slices whole wheat bread
1 t chopped onion
1 egg
In large bowl, combine beaten egg, milk, catsup, bread (crumbled), onion and salt. Shape into 1-inch balls, place on baking sheet at 375 for 25 minutes.
For the Sauce (The important part)
1 ½ C catsup
¾ c vegetable oil
¼ C sugar
¼ C vinegar
1/8 t salt
1 small onion chipped
1 dash Worcestershire sauce
