
You can’t really buy a small ham. If you want the goodness of a big, fat ham portion, it’s going to be 9 or 10 pounds or more. Ten pounds makes a lot of meals for two people. But I buy hams anyway and eat sliced ham for breakfast, for lunch as sandwiches and chip away at it before freezing the remains and making soup at a later date.
After my latest ham purchase, I found a recipe to help finish off the beast with something different. I made Ham Muffins. Here’s how.
First, cube about 2 C of the large ham now occupying the lower shelf of your refrigerator. Add to the ham, a dash of dill, a dash of salt, ½ C mayonnaise and 1 C shredded mozzarella cheese. Mix thoroughly, then spoon into greased muffin tins with crescent rolls (the large side of the triangle on the bottom). Fold the triangles back over the muffin tops and bake in a 350 oven for 8 to 10 minutes – until golden brown.
Now, what to do with the 5 pounds of ham still left in the refrigerator?
Ham Muffins
2 C cubed ham
1 C shredded mozzarella cheese
1/2 C mayonnaise
1 pinch dill
1 pinch salt
1 container crescent rolls, refrigerated, to make 8
