
I love a bowl of turkey soup on a chilly winter day. I just pop a couple of fresh turkey wings into a crock pot or Dutch oven with some chicken broth and cook until it falls off the bone, add some rice and enjoy. But I haven’t been able to find any turkey wings recently.
This week I was determined to do a pot of turkey soup of some description and looked in Food Lion, Wal-Mart and Kroger’s, and no turkey wings. But they did have ground turkey – so why not?
I bought a pound, added a bunch of stuff, and came up with probably what is best described as Ground Turkey Soup, and it was good enough that I will definitely do it again.
This is another easy recipe, and you can use your imagination for the various ingredients, but here is how I did it.
Start with a pound of ground turkey. Crumble and fry it in a pan with a bit of olive oil. When it browns, add ½ C chopped onions, 2 cloves minced garlic and sauté until tender. In another pot (I used my heavy, red porcelain pot. It cooks the best stews and soups of all), pour in a 48 oz. container of chicken stock, a 28-oz. can of diced tomatoes, a 15 0z. can of Cannelloni beans, an 11-oz, can of shoe peg corn, and mix a package of ranch dressing mix in a cup of water and add that. Pour the contents of the turkey, onion, and garlic mixture into the pot and top with a couple stalks of celery for flavor. Cook several hours to blend the flavors and garnish with chopped avocadoes, cheddar cheese and sour cream.
Easy, simple, healthy, delicious.
Ground Turkey Soup
1 lb. ground turkey
1 15 oz. can Cannelloni beans
28 oz. diced tomatoes
48oz. chicken stock
1 pkg ranch dressing mix
1 C water
1 11 oz. can shoe peg Corn
½ C diced onion
2 cloves minced garlic
3 stalks celery (remove after cooking)
S & P to taste
