
“Hot damn, we’re having cauliflower tonight!”
You don’t hear that very often. Never, actually. Cauliflower is one of those things you’ll eat if you have to. It doesn’t really taste bad, but neither does grass.
Cauliflower, though, is a healthy vegetable and it sure would be nice to be able to substitute it every now and then for a deadly baked potato with butter and sour cream.
Fellow cooks, there is hope!
I came across a cauliflower recipe recently that is not only edible, but also delicious. Really. I’m not lying. Here how.
Start with a head of cauliflower. Trim off the stems, leaves and stuff and place it in a dish with an inch of water. Pop it in the microwave for exactly 8 minutes. If you’re off by ten seconds, you’ll screw it up. Just kidding but do it for 8 minutes because that works.
Drain and let cool so you won’t scald your hands. Cauliflower holds heat very well.
While it cools, make a sauce of 3/4 C mayonnaise, 1/4 C grated parmesan cheese, and 2 cloves of minced garlic. Spread the sauce on the now-cool cauliflower and put it in a 400 oven for 15 to 20 minutes, or until golden brown. Garnish with parsley or chives.
Once you taste this dish, you’ll be saying this: “Hot damn, we’re having cauliflower tonight.”
Damned Good Cauliflower
1 3 lb. head cauliflower
¾ C Mayonnaise
2 cloves minced garlic
¼ C shredded parmesan cheese
