
I was in Sam’s Club, poking around, and found a package of 6 leg quarters salvaged from their Rotisserie Chicken from the day before. I prefer the dark meat anyway and it was less than $4, so I bought it.
I decided I would make a Chicken Pie out of just the leg quarters. I call this Easy Goodness. Here’s how.
Since the chicken was cold, it was easy to pull off the skin and tear the legs and thighs into smaller pieces. I used about 2 cups of the chicken (and had a lot left over for sandwiches), 2 cups of mixed veggies and a can of Campbell’s Cream of Chicken Soup, mixing all together, and then pouring into an ungreased pie plate. Next, mix 1 C Bisquick with an egg and a half-cup of milk. Pour that mixture directly over the chicken, veggies and soup and bake for 30 minutes in a 400 oven.
It couldn’t get any easier unless Sam’s Club skinned the chicken and pulled it apart for you. Easy, inexpensive, healthy, and delicious. Easy Goodness Chicken Pie checks all the boxes.

2 cups cut-up cooked rotisserie leg quarters chicken
1can (10.5 oz) condensed cream of chicken soup
1/2cup milk
