
We get coupons in the mail from time-to-time from Kroger’s as “Preferred Customers”. I’ll generally pull out the ones for butter, avocados and eggs – things we use all the time – and redeem them. But they often toss in a “free box” of yellow cake mix from Betty Crocker, so I get one of those for sure. The other day I looked in the cabinet and saw four boxes of yellow cake mix and I didn’t want a cake – so I made cookie bars. They were yummy, easy, and now I only have 3 boxes of yellow cake mix.
The recipe could hardly be easier.
Beat two eggs in a bowl, add the cake mix and 1/3 C of melted butter (butter is better and richer than vegetable oil) and mix well. The batter by this time is very thick but keep at it and add a 12-oz. package of chocolate chips. Spread the batter evenly over a greased 9 x 13 baking dish. Bake at 350 for 20 to 25 minutes, until a nice golden brown. Let cool, slice into bar sized pieces, dunk one in a big glass of cold milk and enjoy. And how easy can that be?
Cake Mix Cookie Bars
1 (15 oz) box of yellow cake mix
2 eggs, beaten
1/3 cup melted butter (or vegetable oil)
12 oz bag of chocolate chips
