I was so pleased with the ease and tastiness of the Devil’s Food Cookies I made from a box of cake mix that I decided to try another cake mix recipe. I saw a Betty Crocker recipe for Strawberry Brownie Bars, and I thought I’d give that a shot. The recipe basically called for strawberry cake mix and butterscotch chips. How can you go wrong with that?
But…
There were no butterscotch chips in the store – even in the candy section
These days when you go grocery shopping, you need to be – as the Boy Scouts recommend – prepared. Prepared to change course. Kroger’s has been flat out of chicken on several occasions and Sam’s Club quite often runs out of hamburger. The supply chain is so irregular, you don’t know what to expect. So be prepared.
I decided to stick with the basic recipe but replaced the butterscotch chips with Heath Bar and Toffee Bits. You can eat those things with a spoon, so I figured it would turn out reasonably well, and it did. The strawberry bars were delicious. Here is the “Be Prepared” recipe.
In a large bowl, mix 2 eggs, ¼ C softened butter, ¼ C brown sugar, ½ package of Heath Bar and Toffee Bits and ¼ C water. Stir well and transfer to a well-greased 9 x 13 brownie pan. Pop it into a 375 oven for 25 to 30 minutes (until the edges come away from the side of the pan.”
Cool, slice into bars and enjoy. It takes less than 5 minutes to put it all together, and about that long to eat half the entire batch. “Be prepared” to gain weight.
