Pepperoni Cheese Chips

February 13, 2025 by Jim Brewer

I saw this recipe float by my computer screen recently. It was colorful, it was simple, it had just two ingredients and it sounded good. So, I tried my hand at a batch of Pepperoni Cheese Chips. They were – as Tony the Tiger would say – great! The two ingredients are grated Sharp Cheddar Cheese and regular old pepperoni slices. Begin by lining two sheet pans with parchment paper. Pour … [Read more...]

Salisbury Steak Meatballs

February 6, 2025 by Jim Brewer

Everybody loves meatballs. They are tasty, they’re versatile and they’re economical. What’s not to like? The little fellas are probably best known as appetizers when cooked with grape jelly, but meatballs make for great entrees as well - like these Salisbury Steak Meatballs. I made a batch in the slow cooker last week and they were both easy and delicious. Takes about 5 minutes to put together but … [Read more...]

Cajun Injected Chicken (Not Fried)

January 30, 2025 by Jim Brewer

I used to fry turkeys. I had a big pot with a basket inside, a solid base for the pot and a flame thrower that would boil the peanut oil in a matter of minutes. I would inject a turkey, lower it in the oily cauldron and it would be done in about 40 minutes. And I have to say that a Deep-Fried Turkey is better – way better – than a turkey cooked in the oven. But frying a turkey created a mess – … [Read more...]

Delicious (and Healthy) Turkey Chili

January 23, 2025 by Jim Brewer

Ground turkey has no calories. It’s like eating air. You could eat five packages and not gain an ounce. Ground beef, on the other hand, is like eating Fried Lard. You will gain weight if you eat any of the fat-infused beef and your bathroom scales will make snide remarks as you approach. In an attempt to eat a couple bowls of chili and not have to loosen my belt buckle, I decided to make a … [Read more...]

Slow Cooker Spareribs

January 16, 2025 by Jim Brewer

“Daddy!  You’ve got to try this recipe. We used short ribs and they were the best I’ve ever tasted!” That was an email I got from my daughter, Angelin, after she and her husband Brent had just wolfed down every morsel from this Slow Cooker Ribs recipe out of Taste of Home. I think what makes them so good is both the tenderness from slow cooking and the sauce made with a … [Read more...]

Garlic/Ranch Pretzels

January 9, 2025 by Jim Brewer

Pretzels are good, but Garlic/Ranch Pretzels are better. In fact, they are addictive. We received a gift box of theses scrumptious snacks for Christmas, and they were so good I decided to try my hand at a batch. I knocked it out of the park. As a snack, pretzels are a far better choice than chips with fewer calories and far less saturated fat. Homemade pretzels are a real treat, but I decided … [Read more...]

Heavenly Cod

January 2, 2025 by Jim Brewer

Fish is good and it’s good for you. My Daddy used to say that fish was “brain food” and if you ate it, you got smarter. But smarter or not, I have always loved eating fish. Unfortunately, I like eating fried fish. When we go to the beach it’s always a “Fried Seafood Platter”, maybe good for the brain, but not so much for the arteries. I had seen a recipe recently for Broiled Heavenly Halibut, … [Read more...]

Ribeye Steak and Vegetable Soup

December 26, 2024 by Jim Brewer

Nancy was under the weather and when she’s not up to snuff, she wants soup. I decided to make her some vegetable beef soup, but with a little variation. Instead of stew beef or chuck, I used ribeye steaks as the beef part. I’m not sure why stew beef is the universal choice for meat in vegetable beef soup. Maybe because it’s cheap. But it is always tough and chewy and has very little … [Read more...]

On the Battlefields of Vicksburg

December 12, 2024 by Jim Brewer

When I think of the Civil War, I think of Chancellorsville, Bull Run and the Jackson’s Valley Campaign. Only until I sailed the Mississippi did I grasp the importance of this mighty river in the War Between the States. Vicksburg was settled on the highest banks along the entire Mississippi. Whoever controlled Vicksburg, controlled the Mississippi and as important as the great river is to … [Read more...]

Blueberry Stuff

December 5, 2024 by Jim Brewer

I have printed this recipe several times, but it’s so good, who’s counting? My wife and a group of her early morning exercise friends meet periodically for breakfast. Sometimes they go to a local restaurant and sometimes they meet at someone’s home. A couple years back, they came over to our house and I volunteered to cook for them. One of the dishes I served was a … [Read more...]
