Eye of Round Roast

December 7, 2017 by Jim Brewer

The eye of the round in roast form is one of the best values of all cuts in the meat department. The eye of round has a wonderful flavor, but it’s tough, plain and simple. There is an answer, however, for tough cuts like the eye or round. Cook it at a high temperature to seal in the juices and slice it razor thin. Unfortunately for me – being one of the world’s worst knife sharpeners … [Read more...]

A Gayle’s Ham For Christmas

December 7, 2017 by Jim Brewer

Hams make a great Christmas gift, and there will be lots of them exchanged later this month - Kite Hams, Turner Hams, Smithfield and the like. But the best ham of all in my opinion, and the most reasonably priced, is a Gayle’s Ham. I wouldn’t trade a Gayle for any of the above. I discovered Gayle’s Hams a number of years ago in my travels to and from the Harrisonburg area. Gayle’s Market is a … [Read more...]

Remembering Great Christmas Specials

November 30, 2017 by Jim Brewer

One thing I dearly miss from our Boomer years is a December full of great Christmas specials on TV. This was entertainment at its finest – top stars, top acts, great music, great comedy and classic cartoons. In the 1950’s and 60’s, variety shows dominated the airwaves. Singers with top hits appeared regularly and comedians like Bob Newhart and Jonathan Winters left us in stitches as Hollywood … [Read more...]

Nags Head Report

November 30, 2017 by Jim Brewer

Mitchell and David Plants with Uncle Raymond   Says Capt. Reese Stecher: “We got lucky this week. The weather cooperated and we were able to get after the stripers every day. They did not disappoint.” With the current weather pattern, Capt. Stecher says the fish are not going anywhere for a while. Mitchell and David Plantz, from Charlottesville along with their Uncle … [Read more...]

A Deer in the Headlights

November 30, 2017 by Jim Brewer

Some say to watch out for deer in the headlights, but I say just watch out! I have seen literally hundreds of deer on the roadsides in recent weeks – dead and alive - and they don’t wait until dark to come out. The deer are in rut, bucks are chasing does and they run across roads after the enticing females and worry about cars and trucks later. Recent studies say that Virginia is now the 11th … [Read more...]

Crab Stuffed Portabellas

November 30, 2017 by Jim Brewer

I saw the package of portabella mushrooms at Sam’s Club from two aisles away. There were four, large portabellas in the pack, nearly perfect in size for stuffing something, so I bought them. But what to stuff? Sam’s Club also had a sweet deal on their fresh crabmeat. It looked fresh, so I bought a pound, perfect for stuffing the portabellas. To create a delicious entrée with portabella … [Read more...]

Return To Diamond Zoysia

November 30, 2017 by Jim Brewer

We generally play our family reunion golf tournament at Mallard Head Country Club in Mooresville, NC, just outside of Charlotte. But last June, the course was closed. They were re-doing all their greens. I figured they had lost some to hot weather or had used the wrong chemicals, but they were putting in all new greens with a grass called Diamond Zoysia. Old Trail in Crozet and one of the Stony … [Read more...]

The Chicken Coop

November 30, 2017 by Jim Brewer

Sometimes you’ll run across great food in unlikely places. Sting Ray’s on the Eastern Shore comes to mind: A great seafood restaurant within the confines of a gas station and gift shop. A number of years ago I ran across another hidden pearl of an Eatin’ Out place. My friend Donald Ramirez and I used often hunted the James River Wildlife Management Area near Wingina. To get there, we had to … [Read more...]

Sight Fishing Report

November 30, 2017 by Jim Brewer

Capt. Alan Cain   Hello friends and fellow anglers. Hope you are all doing well and had a great Thanksgiving. It has been a while since my last fishing report, but I wanted to give you all a quick update on the last few months. I left North Carolina in October for my annual 3-month trip to Louisiana to guide for giant adult redfish and black drum. This is all shallow water sight … [Read more...]

While Shepherds Watched

November 30, 2017 by Jim Brewer

Seeking Pasture Near Bethlehem A 4-part Christmas story by Jim Brewer   The sheep had gone easily into the fold that evening. Young Amos was pleased that he had not been called on to round up any stragglers. Rather, the flock of 98 was safely within the confines of the corral made of stones from the fields, and erected just north of the town of Bethlehem, known to the shepherds as … [Read more...]
