If it ain’t easy, don’t cook it.
Life is too short and there are too many easy recipes that result in great food to worry over a complicated recipe. Breakfast muffins, for example.
Breakfast muffins are simply ideal. They are easy to make, and the next morning you pop one in the microwave and in minutes you’re eating a total breakfast with one muffin.
Last week, I made a few Sausage Muffins and I want to share the simple recipe as well as recommending another great product from Aldi’s – Appleton Farms Premium Sausage.
I noticed this package of sausage had much less grease then the first few I tried (even though grease adds flvor). But when I crumbled and browned this package, there was barely enough grease remaining to fry an egg. I love the flavor and it’s a buck less expensive than Jimmy Dean’s or Gunnoe’s.
Now for th recfiipe.
I made a half-batch, six muffins, since it was just the two of us, but double the ingredients for a full dozen.
Cook the crumbled sausage in a skillet until no longer pink. Drain the fat, if any, and add two beaten eggs, ¾ C of grated sharp cheddar cheese, 1/8 C milk, ½ C of Bisquick to the sausage, Mix well and spoon into the well-sprayed muffin tins. Bake at 350 for 20 to 25 minutes or until nice and brown.
Easy and delicious.
Sausage Muffins
1/2 lb. sausage
1/2 cup Bisquick
2 large eggs, beaten
1/8 C milk
3/4 C shredded cheddar cheese
