I grill a lot. Steaks, burgers, dogs, chicken, shrimp, etc. One thing I had never tried, however, was pork bites. I decided to give them a shot and the dish turned out very well.
I bought a pack of pork tenderloins (always 2 in a pack; don’t know why) and I cut one loin into bite size pieces. I marinated them in a BBQ sauce, put the bites on several skewers and grilled them over high heat. They were done in minutes and passed the “Nancy test”. If my wife Nancy’s will eat something new and different, anybody will. It’s like a universally accepted dish from then on.
Pork bites are easy to prepare, inexpensive to buy and a nice change of pace.
Here’s how I did mine.
For starters, I removed that film you find on the bottom of a tenderloin. It’s tough and inedible, so cut it off with a sharp knife. It wasn’t a large loin, so I split it lengthwise down the middle, then cut into 1-inch sections – bitesize, if you will. You can use any (or no) barbeque sauce. One of my favorites is JohnBoy & Billy’s Grillin’ Sauce. I like it because the sauce has a little tang and is not overly sweet. But use what you like or whip up your own.
After an hour or two in the fridge, I put the pork bites on skewers, so they didn’t touch (cooks better). I put them on the grill for about five minutes on each side and they were done. Ideally, they should be slightly pink inside, but if you like them well done, go for it.
