
I am now reaping the first fruits of my small vegetable garden. The early stuff is coming in while I bide my time to plant the summer crops. Afterall, it was in the low 30’s overnight two times this week. But my lettuce and spring onions are bursting forth and saving me money!
We love spring onions, or scallions as some call them. I enjoy just plucking them from the soil, then take the outer skin off and dredge them in salt as part of a great garden salad. Spring onions were still priced high in the grocery stores this week – $1.79 a bunch at Kroger’s and we have picked multiple bunches already with plenty more to enjoy. I have found, though, that regular onions are better for eating early than the exotic candy onions. The candy onions have thicker skins in the early stages. Therefore, I’m going to let the candy onions grow larger and eat the plain, yellow onions as my spring onions.
My lettuce crop (also still priced high in the stores) is exploding. I have butter lettuce, oak leaf lettuce and black Simpson leaf and all are producing. We have fresh garden lettuce almost every night, and that’s hard to beat.
Usually, a small garden like mine is just fun to grow, but not very profitable. But so, far, this one has been and I have high hopes for future butter beans, tomatoes, cucumbers and squash.
By the way, it’s still not too late to plant a garden – even if it’s just in a pot of dirt.
