Salmon has become something of a staple at Chez Brewer. It is healthy, though wild caught salmon is healthier than farm raised, and it is fairly economical, at about $9 a pound. We have it every couple weeks or so, but you can quickly get in a rut with the same-old, same-old recipes. I saw a recipe recently that I followed – sort of – and it was as good as it gets when it comes to salmon. It’s … [Read more...]
Deer Harvest Stable
The results from the 2017/18 big game harvest are now in. Bear hunters had a record year, deer hunters shot about as many as the previous year and the fall turkey kill was off considerably. Bear hunters tagged a total of 2,861 animals, 17% more animals than the previous year’s record total. This number is indicative of the rapidly increasing bear population in Virginia. The animals are … [Read more...]
Thar’ She Blows
Four nor’easters in three weeks? That’s just about killed any action on the saltwater front. There are some ‘togs off the Virginia coast, but it’s been hard to get to them in 10 foot swells. Action on the Outer Banks has been limited to a few keeper pups near The Point and good catches of blackfin tuna out of Oregon Inlet, when the fleet can sail. Give it a week and things should pick … [Read more...]
The First (And Best) Talent Show
They are trying to resurrect American Idol. Good luck with that. I saw the first episode, and instead of focusing on talent, they do touchy, feel-good background stuff about the performers. It’s not who the best singer is, it’s who has the best, most politically correct sob story. They’ll have to get along without me for however long the show lasts – I’ll give it one season. But … [Read more...]
Travel In Style
It was our 50th Anniversary, no small feat, and we wanted to celebrate in style – a once in a lifetime trip. We considered the Bahamas and Mexico, but Nancy had gone to Hawaii two years ago and was enthralled with the beautiful islands. The thought of playing golf on one of those courses you see on TV in February was enough to put me on board with a cruise or trip to the Rainbow … [Read more...]
Sea-Bands Prevent Seasickness
Not all ocean liners offer smooth sailing. The first cruise we took in the Bahamas was non-eventful as far as rocking and swaying. You really couldn’t tell you were on a boat at sea. But when you go to Hawaii in the winter season – now – the winds and seas are against you. Our ship, Pride of America, sent pedestrian passengers bouncing off the walls as they approached their rooms. It was … [Read more...]
Birds of a Feather
I missed my backyard birds – my cardinals, my blues the goldfinches and the chickadees. I was glad to get back home after 10 days on the road and reconnect with my fine-feathered friends. While in Hawaii, however, I paid extra attention to the birds on the islands. As best I can tell, there was only one bird there that I also see in my backyard – the House Sparrow. Because Hawaii … [Read more...]
Ruth’s Chris: Dinner For Two
I think we have over 200 restaurants in Charlottesville, but we don’t have a Ruth’s Chris Steak House. I’ve heard their ads on the radio for years, and I’ve always wanted to try it, but I never had the opportunity. In Honolulu, I finally got that chance. It was our last night in Hawaii and we wanted to finish off our 50th Anniversary vacation with a bang. There were two Ruth’s Chris … [Read more...]
Catfish and Remoulade Sauce
For many chefs, two dishes/ingredients are often overlooked - catfish filets and Remoulade sauce. Fresh catfish is a staple in most seafood cases. These farm-raised fish are grown locally, not overseas. They have a nice flavor, they are not overly fishy and they usually go for $6 or $7 a pound. You can get four filets for less than $10. And Remoulade sauce. Remoulade Sauce is a … [Read more...]
Saltwater Update
Despite three nor’easters in a row, Virginia saltwater anglers have found small windows of fishable weather. Tautogs are available on the ocean wrecks and at the Chesapeake Bay Bridge Tunnel. Last week Jamal Esfahani and crew had an incredible day. They weighed their largest fish (9 lb. 13 oz.) at Long Bay Pointe Bait and Tackle. They tagged and released 27 citation … [Read more...]
