I often go to the store with an incomplete grocery list. If I see something than catches my fancy, I’ll buy it and figure out the details later. Last week I was in Aldi’s and saw packages of Petite Sirloins on display. I had seen them before and was curious. They come three small steaks in a pack. I had no idea how I would fix them, but I tossed them in my grocery cart.
When I got home, I did a little investigating to see what I was up against.
The petite sirloin or ball tip is a small to medium-sized cut consisting of multiple muscles around the hip of the animal. It has the great flavor of sirloin, but the meat is lean and not particularly tender. It sounded to me like it was time to marinade and tenderize my new find.
I made a marinade of 1 T olive oil, 1 t onion powder. 1 t minced garlic, 1 T soy sauce, 1 T Worcestershire sauce and 1 T vinegar. I put the steaks in a zip loc bag with the marinade and put them in the fridge for several hours.
At dinner time, I put a package of sliced portobello mushrooms in a frying pan with 1 T olive oil and 1 T butter and cooked them till nice and brown. I removed the mushrooms, added a bit more butter and olive oil to the pan. Beforehand, I had cut the steaks into bite size portions and then cooked the “bites” quickly, about 3 minutes per side till nice and pink inside
I served them with the mushrooms, and they were delicious, tender and chocked full of flavor.
