
We hosted a Dawg-A-Rama last week, inviting a few of our die-hard hot dog friends to a back yard cookout and we served Nathans, Hebrew Nationals and Oscar Meyer dogs with all the fix in’s – including homemade coleslaw, onions, pickles, relish, mustard, catsup, jalapenos, cheese and, of course, chili.
I decided to make up a batch of home-made chili and experimented along the way, tasting as I went. It turned out pretty darn good – and it was fairly easy to make.
Here’s how.
I started with a pound of ground chuck (80/20 blend). The 70/30 burger is too greasy and the leaner cuts lack the flavor. I browned the beef in a frying pan then poured off the grease. Next, I added 2 tablespoons of dried onions to the burger and cooked that a couple minutes, then I added 2 cups of beef stock and reduced till the chili was nice and thick, Next, I stirred in a cup of chili sauce and 2 teaspoons of chili powder, some salt and pepper and turned it down to simmer and reduce. It was rich and tasty with a nice kick. A perfect compliment to any Dawg-A-Rama.
Pretty Good Hot Dog Chili
1 lb. ground chuck
2 c beef stock
2 T dried onions
1 c chili sauce
2 t chili powder
Salt and Pepper
