
I saw this recipe float by my computer screen recently. It was colorful, it was simple, it had just two ingredients and it sounded good. So, I tried my hand at a batch of Pepperoni Cheese Chips. They were – as Tony the Tiger would say – great!
The two ingredients are grated Sharp Cheddar Cheese and regular old pepperoni slices.
Begin by lining two sheet pans with parchment paper.
Pour some shredded cheddar in a bowl for easier handling and pinch about 1 tablespoon of cheese and position in a circle on the sheet. They should be a bit wider than the pepperoni slices, but it’s not critical. Put as many cheese piles on as you can, then gently place a slice of pepperoni on each pile of cheese. Bake in a 350 oven for 8 minutes, or until the cheese just begins to turn a bit brown.
Remove and allow to cool 15 or 20 minutes before using a thin spatula to transfer them onto paper towels to absorb some of the grease. Let the Chips set and remove them to a container and serve as an appetizer or perhaps a go-with for burgers or pizza. They are fun and easy – and good.

1 8-oz. bag of shredded Sharp Cheddar Cheese
1 package sliced pepperoni
