
Mexican dishes are good, most everyone enjoys a taco or burrito and they are easy to cook. I like the “easy” part.
More and more, I am cooking and enjoying Mexican food, but I always struggle with sides. Some think that refried beans is a side, Maybe for dogs, but not humans. So I am always pressed when it comes with what to serve along with enchiladas.
Corn is good, rice is good, black beans are good. Why not make them a side? I did and it was very good. I used the cooked rice from one boil-in bag, added a half package of frozen corn, one can of drained and rinsed black beans and to give it a Mexican flair, I sauteed a quarter of an onion and a half of a bell pepper, added a ¼ cup of taco sauce and voila – a pretty good side dish for most any Mexican entree. And easy.

1 can black beans
1 bag boil-in rice
½ bag frozen corn
¼ diced onion
½ diced bell pepper
1 T olive oil
¼ C taco sauce
