
Sam’s Club is widely known for its Rotisserie Chicken. At $4.99 for a perfectly seasoned, ready-to-eat chicken, I have often made a last-minute stop at Sam’s to pick one up for diiner.
Several years ago, Sam’s started cutting up their leftover rotisserie birds and making chicken salad, and it is the best.
This week, I thought I’d pick up a package of chicken salad from Sam’s and Nancy and I could make several lunches for the week, but the chicken salad is a little pricey, about $5 a pound. A tub often costs twelve or fourteen bucks. So, I decided to make my own. I found a recipe on-line, bought one of their Rotisserie Chickens, diced it up and made some darned good chicken salad. If you have time, it’s a real money saver.
Here’s how.
Remove the skin and bones from a Sam’s Rotisserie Chicken and cut it into small pieces. I like it shredded, but Nancy likes it diced. So I diced it. Add to the chicken, ½ C mayonnaise, 2 C finely chopped celery, 2 C of grapes (red or green) that have been halved, 1/4 C sweet pickle relish, 1/4 C dill pickle relish and salt and pepper.
Mix thoroughly and let is mellow a bit in the fridge before serving. For about six bucks you can make yourself a pile of delicious chicken salad –and it’s just like Sam’s Club.
1 Whole Rotisserie Chicken
1/2 C mayonnaise
2 C chopped celery
2 C red or white grapes that are halved
¼ C sweet pickle relish
¼ C dill pickle relish
S & P to taste
