
Cole slaw happens to be one of my favorite sides. It pairs perfectly with dishes like Fish, BBQ, Fried Chicken and Hot Dogs. Unfortunately, many stores and restaurants consider cole slaw to be an afterthought and it turns out like blah-shredded cabbage. But not at Kentucky Fried Chicken. Their cole slaw is amazing. It is so tasty that I often make a special trip to the restaurant and order a Family Size carton of their slaw to go with my cooking.
Recently, I saw a copycat recipe for KFC coleslaw and decided to give it a whirl. It turned out pretty good.
Here’s how.
The secret is buttermilk. If you don’t buy a quart of buttermilk, don’t bother with this recipe. It makes everything work. Start with a large bowl with a 16-oz. package of shredded cabbage with carrots, then add 1T of finely grated sweet onion, ¼ C sugar, ½ C mayo (I used Miracle Whip), ¼ C buttermilk, ¼ C regular milk, 1 ½ T white vinegar, 2 ½ T lemon juice, ½ t salt, and 1/8 t pepper.
Mix well and let the bowl hang out in the fridge for an hour or two before serving, then bring on the Hot Dogs and BBQ.
KFC Copycat Cole Slaw
1 T
onion finely grated
1/4 C sugar
1/2 C mayonnaise
1/4 C buttermilk (well shaken)
1/4 C milk
1 1/2 T white vinegar
2 1/2 T fresh lemon juice
1/2 t salt
1/8 t black pepper
1-16 oz. bag coleslaw cabbage with carrots
